Happy Halloween! I love seasonal bakes, especially around autumn/wintertime. Today I’m going to show you how I created these spooky Halloween cupcakes inspired by little bats and ghosts.
Cupcakes (makes 12):
115g / 4 oz butter, softened
115g / 4 oz caster sugar
2 eggs, lightly beaten
1 tsp vanilla extract
115g / 4 oz self-raising flour
1 tbsp milk
150g / 5.5 oz unsalted butter, softened
1 tsp vanilla extract
280g / 10 oz icing sugar
1-2 tbsp milk
1. Before you start preheat the oven to 180C/350F/Gas Mark 4, and place 12 cupcake cases in a baking tray.
2. First put the butter and caster sugar in a large bowl, and using a spoon or electric mixer, beat together until the mixture is pale, light and fluffy.
3. Beat the eggs in a jug. Then pouring about 1 tbsp into the bowl at a time, beat the butter/sugar and eggs together until combined.
4. Next beat 1 tsp of vanilla extract, and using a large metal sieve, sift the flour into the bowl a bit at a time, gently folding the mixture with a spoon between each addition until thoroughly incorporated.
5. Add 1 tbsp of milk and again gently fold into the mixture. The cupcake mixture should have a smooth consistency and drop easily from the spoon if tapped on the side of the bowl. If it is too runny add a bit more flour to the mixture.
6. Next, carefully spoon the mixture into 6 of the cupcake cases. I find it works best to fill each case halfway up. These cupcakes will be the vanilla ghosts.
7. Now place 3 Oreos into a ziplock bag, seal it shut and use a rolling pin to break them up into crumbs. Add this to the remaining cupcake dough and stir until full incorporated. Then spoon the mixture into the remaining 6 cupcake cases. These will be the Oreo bats.
8. Bake in the preheated oven for 15-20 minutes, until the cupcakes are risen, golden and firm to the touch.
9. Using oven gloves remove the tray from the oven. Leave the cupcakes in the tray for about 10 minutes, then carefully transfer to a wire cooling rack, leave to cool completely.
1. Place the butter and vanilla extract into a large mixing bowl and using an electric mixer (or fork) beat until very soft and pale.
2. Gradually sift in the icing sugar, beating well after each addition. The more you beat at this stage the lighter and fluffier the buttercream will be.
3. If the buttercream is a little thick add about 1 tablespoon of milk, and beat until fully combined for a softer consistency.
~ Decoration Time ~
1. Starting with the ghosts, we begin by cutting a pyramid or cone shape out of the centre of each of the 6 cupcakes.
2. Fill in the hole with a little buttercream and stick the cut cake back on top, pointy side upwards.
3. Now coat the cone shape in buttercream and shape it with a teaspoon or palette knife until it is the shape you want your ghost to be.
4. Finally take 2 chocolate chips to add eyes to your ghosts, and even a mouth too if you’d like.
1. Firstly organise your Oreos, you will need 6 whole Oreos for the belly of the bats. Then for the wings, twist apart 3 Oreos so that you have 6 slim cookies, scrap off the Oreo cream and add it into the buttercream, then use a knife to break each of the 6 in half so you now have 12 individual wings.
2. Now place another 2 or 3 Oreos into a ziplock bag, seal it shut and use a rolling pin to break them up into crumbs, the same as you did for the cupcakes. Add this to the remaining buttercream and mix with the electric mixer until full incorporated.
3. Spoon a dollop of buttercream onto each of the 6 Oreo cupcakes.
4. Now take an Oreo and add it to the centre of each cupcake so that it is standing up.
5. Then add a wing into each side of the Oreos so that they look like little bats!
